Eggless Chocolate Baked Doughnuts with Chocolate Glaze

This year Anna chose doughnuts for her special birthday snack at school. They turned out great!

Eggless Baked Chocolate Doughnuts with Chocolate Glaze

(If you read my earlier blog post about my pumpkin doughnuts you will see I learned my lesson and put parchment paper down before glazing and sprinkles. Clean up was certainly faster this time.)

Eggless Chocolate Baked Doughnuts with Chocolate Glaze

  • 3 cups flour
  • 1 1/2 cup cocoa powder
  • 1 1/2 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon fine grain sea salt
  • 1 1/2 cup milk, at room temperature
  • 2 Tbsp White Vinegar
  • 4 Tbsp Pumpkin Puree (this is approximate, add more or less if you feel it needs it)
  • 4 tablespoons butter, melted
  • 2 teaspoon vanilla

Preheat the oven to 325 degrees. Lightly coat the donut pan with non stick spray. Line a baking sheet with parchment paper and place a wire rack over the parchment. Set aside.

In a large bowl, sift together the flour, cocoa powder, sugar, and baking soda. Stir in the salt. Add the milk with vinegar and stir to combine, then add the butter. Add the pumpkin puree and vanilla. Stir, just until the mixture is combined.

Fill each donut mold about 2/3 full. Bake for about 8 minutes or until a toothpick comes out clean. Let the donuts cool in the pan for 5 minutes, then turn out onto the wire rack.

Chocolate Glaze:

  • 4 1/2 T unsweetened cocoa powder
  • 1 teaspoon vanilla
  • 3 T milk
  • 1 1/2 cup powdered sugar

Mix in a bowl with a whisk til smooth. Add more confectioner’s sugar or milk til you have the consistency you want. Use right away with warm doughnuts if possible and let sit for about 30 minutes to set.

Happy Baking!

Belated birthday wishes…

As the end of January 2012 approaches I have been remiss in wishing my two oldest pumpkins a Happy Birthday. I officially have a child in the double digits. TEN years, Katy is ten. How did that happen and Anna is eight. Which means she’ll be ten sooner then I’d like.

Hard to believe they’ve gone from this:

Katy 3wks

Anna 2wks

To:

Katy my Zombie, Tara my Tinkerbelle and Anna my Frost Fairy.

Happy Belated Birthday Pumpkins! We love you!

Farmer’s Market Ornament of the Month for January…

Farmer’s Market January 2012 Ornament of the Month:

Cabbage

To kick off the New Year is the newest member of my Farmer’s Market Collection of Ornaments. A sweet head of cabbage that would look equally cute propped up in your kitchen or on your tree.

Rearranging the virtual walls a bit…

If you are a regular visitor of my blog/store here you are probably noticing a wee bit of a change. I’m in the process of merging my old blueladystudios family blog with my business page here at pumpkintreelane. If you are a follower of my blueladystudios blog I will be setting up an archive page for some of older posts that I don’t want t lose. I also have a new page that will be dedicated to recipes, particularly the ones I’ve adapted for my youngest pumpkin who has a host of food allergies.  I’m hoping that in not trying to maintain two blogs that I will be better about updating.

For now you can find my work for sale at my Etsy shop.

Happy New Year!

Summer is ending…

8/30/11

Here at Pumpkin Tree Lane ‘Headquarters’, Summer is coming to an end. My girls have headed back to school and mornings are giving a hint of Fall weather to come.

For Pumpkin Tree Lane that means a bunch of new Halloween items will be added in the coming days and weeks. I love Halloween, the costumes, the candy!

Also new to the shop are two new sections, Dollhouse Miniatures and Paper Embellishments. When I have time I have found I love working with miniatures, not much in there right now but hope to add to it later in the year. Paper Embellishments will features tags and other scrapbook items. They will primarily feature paper and stamps that I have designed.

So please have a look around and check back often in the next few weeks as I’ll be adding lots of new items.

Toadstool Trios!

The newest item in my store started out as an idea for end of year Teacher gifts. I wanted something a bit different from the traditional apple motifs or candy for my youngest daughter’s Pre-K teachers. My older two got into the mix and wanted a set for their teachers too so I was buried in toadstools for several days. :)

In the end I thought they turned out so cute that I will be listing them here on Pumpkin Tree Lane. They have a small pin hole in the bottom perfect for a toothpick or piece of wire to secure them into a potted plant, but also have flat bases and can be kept as a cute knick knack for bookcases and mantles.

Nearly There…

5/18/11

Almost done with current inventory. We are also gearing up for the end of the current school year and the usual adjustment as Mom and kids get used to being with each other 24/7 again. :) Hope to get some truly new inventory in the shop in the next couple weeks after Bridging Ceremonies, Field Days, Dances and Last Days are done for a few months.

Welcome!

Welcome to the new home of Pumpkin Tree Lane! I’ll be setting things up this week so for the next few days things will be sparse and may have a tendency to move around and disappear. :)

You can look for updates here or on my blog BlueLadyStudios.
